Shaken Chicken Salad

First, break down the rotisserie chicken in its bag using gloved hands, removing all bones. To the bag, add the diced avocado, halved cherry tomatoes, thinly sliced shallot, torn dill, goat cheese (including its oil), thinly sliced cucumbers, rinsed and drained white beans, and micro greens. In the empty goat cheese jar, combine the remaining oil from the goat cheese, 1/4 cup balsamic vinegar, 1 teaspoon Dijon, a pinch of salt, a pinch of red pepper flakes, and a squeeze of lemon juice to make the dressing. Pour this dressing into the bag with the salad ingredients. Use tongs to mix everything thoroughly until well combined. Serve and enjoy!
