Chocolate Almond Butter Banana Bites

1. Cut the bananas into about 1/4 inch thick slices and lay them on a parchment-lined baking sheet. Freeze for about 20 min. This helps the almond butter stick to the banana.
2. Smear about 1 tsp of almond butter between two slices of banana to make a little sandwich and pop them back in the freezer.
3. Use a double boiler to melt the chocolate and coconut oil together and mix till fully combined.
4. Dunk the almond butter banana sandwich in the chocolate mixture using a fork to help the chocolate drain off.
5. Pop them back in the freezer for about 10 more minutes until the chocolate is hardened (you can go back and dunk them in a second layer of chocolate if you want a thicker coating).
6. Finish with some flakey salt and enjoy!
